The Culinary Team is excited to begin Culinary Classes in May 2024 and Chef Maia has some wonderful and unique class ideas that will surely leave you excited to learn and cook more!

Learn all about food and cooking with your community.
With services ranging from knife safety to baking, we want to allow everyone in our community to gain kitchen confidence and cooking skills.

Companies, sports teams and clubs, agencies, groups, or individuals can book our culinary teaching kitchen for a group activity, team-building class, or skill-building class.
The kitchen can be booked for an evening or afternoon with your choice of activity and class. Our chef will lead a class based on your pick, with team-building exercises, kitchen confidence, and an all-encompassing experience.

We are prepared to host specialty theme parties for group bookings, date nights, or class series that you can take individually or in a bundle for the group.
Date Night: Bring your significant other and prepare an appetizer that you can enjoy together at the end of class or make again for your next date night at home. Will you enjoy a creamy fondue, a tangy bruschetta, or a sweet tart with your sweetheart?
Taste the World: A series of four classes that introduce you to palates and flavors from Europe to Asia and home to North America. Tuscan Chicken from Italy, Butter Chicken from India, Beef Bulgogi from Korea, and authentic Tacos from Mexico are a sample of what you can enjoy.
Hearth & Homestead: Didn’t learn at Grandma’s side? We got you. Learn how to can that produce from the garden. Make jams & jellies, or your own cheese and yogurt. Find new ways to use your sourdough starter and discard. These classes will take us back to our original rural roots.
Sweet Spots: Learn to make unique cookies and scrumptious pies, just like Grandma used to make! Raspberry Cheesecake to Peach Cobbler and Strawberry Rhubarb Custard are a few of the mouth-watering recipes we can explore.

Gifting program
Our gifting program allows community members to prepay for classes for someone in need.
Choose an amount of money you want to donate and that money will allow someone to attend classes for free who can not otherwise afford it. We encourage clients to choose classes they would like to attend, and as we receive gifted classes, we offer these spots to our clients.
This gifting program will also pay for our client-specific classes, where we teach them how to utilize and stretch the food given in their hampers. They will also learn basic skills such as knife safety, using an oven or stove, and making leftovers into soups or other meals.

Frequently Asked Questions
How much are classes?
Currently our classes are $40. This covers everything including ingredients and materials.
How long are classes?
Classes range from an hour to two and a half hours depending on the theme and recipes being completed in class.
What happens if a class is cancelled?
We currently have a class minimum of 4 people, so if we are unable to fill those seats unfortunately we will have to cancel the class. We will let you know two days prior to the class if we have to cancel, you will then have the option of choosing another class for your fee to be transferred to, or we can refund you the cost.
Where does our money go?
The fee you pay goes towards ingredients, our instructors time, and materials. Any profit goes right back into the food bank to support the community.
Who can take a class?
Our classes are for everybody in the community, we have two classes a month that are dedicated to Food Bank clients, but you will never see these on the calendar. So if you see it you can book it!
Where are we located?
We are located upstairs at the Red Deer Food Bank. When you arrive and come in the front doors, take the staircase that is directly on your right up and then continue straight and you will find yourself in Kitchen 49.
Should I eat before the class?
We would recommend eating a light snack, or something to get you through the class. We will be tasting as we go and will have a completed recipe for you to taste at the end of the class.

Christmas Cookies (Session 1)
Christmas is around the corner! Time to break out the baking supplies!
Chef Maia is excited to offer a series of THREE classes on making Christmas cookies, each with different flavours, techniques and skill levels.
For newbies to baking, Class One is starting with some basic Christmas standards, Snickerdoodles and Inside Out Red Velvet Cookies.
In this class you will:
Learn the secrets to perfectly golden, chewy cookies
Learn simple ways to dress up basic cookies
Discuss different ways to package cookies for gifting to friends, neighbours and co-workers.
You will leave class with 2 dozen delicious cookies to share with your family, give as gifts,... or hide in your desk at the office.
$40

Christmas Cookies (Session 2)
Run, run as fast as you can to learn how to make the Gingerbread Man!
Gingerbread cookies and Christmas are synonymous. In this second class of the series, Chef Maia will have you baking the Gingerbread Man (or snowflake or Christmas tree) and introducing you to simple piping techniques.
After this class you will know:
How to make the perfect gingerbread, firm on the outside and soft in the middle
Basic piping skills & the desired icing consistency
Other flavours that pair well with gingerbread such as fruit plate sides, drinks and glazes
You will take home a dozen decorated gingerbread cookies and recipes in a Christmas-themed container.

Christmas Cookies (Session 3)
Class Three in the Christmas Cookies series hits the big time: Those beautiful frosted cookies that make people "ooh" and "aah" over them!
Chef Maia will show you how to bake these perfect Rolled Shortbread Cookies and then go "next level" with the decorating!
In this class you will learn:
How to bake melt-in-your-mouth shortbread
How to create the perfect royal icing
Piping, 'flooding', and other embellishments
You will leave with a dozen baked cookies and as many as you can have decorated in the time available. (You also get to take the extra icing so you can finish all the cookies at home.)

Kids Christmas Cookies Class (Session 1)
Bring your kids to Kitchen 49 for the pre-Christmas PD days and have them bake cookies for their fam and friends! Age-specific groups and time blocks are available so kids can work at an appropriate pace and skill level.

Cinnamon Buns & Spice Cream Cheese Icing
Tell us that there is anything better on a cold wintery morning than a warm cinnamon bun and a cup of your favourite hot drink!
Chef Maia will be sharing her best Cinnamon Bun recipe, complete with Spicy Cream Cheese icing!
When class is over, you will have learned the best ways to get those fluffy, gooey cinnamon buns at home without spending a premium from a big-box restaurant.
In this class you will:
Make, roll and shape your own dough into those lovely swirls
Blend up a complimentary icing to enhance those cinnamon-spice blended flavours
Learn how to keep your buns from getting crusty. (The cinnamon buns. You're on your own for THOSE buns.)

Dinner Rolls & Honey Butter
Have you ever wondered how to make light, fluffy, buttery buns? They are such a warm and homey touch for any meal and make the BEST bun-wiches, especially after Christmas dinner.
Chef Maia can show you how it's done! In this class, she will take you through the entire process of making lovely dinner rolls sure to impress your family and dinner guests.
In this class, you will learn:
The balance of temperature, timing and texture in making rolls and breads
How to get consistent sizes and shapes to your dinner rolls
Different kinds of compound butters, the sweet and the savoury
At the end of this class, you will leave with a 125ml jar of honey butter and one dozen perfect dinner rolls, fresh from the oven.

Autumn Risotto: Pumpkin & Squash
We are well into "sweater weather", so it's time to immerse yourself in the flavours of fall. We're going to get things warmed up in the kitchen with belly-filling basics that use those in-season veggies in new ways.
Chef Maia will teach you how to create a creamy comforting risotto using fresh, seasonal pumpkin and squash. In this class you will:
Perfect the cooking technique to create mouth-watering risotto
Sample the variety of flavours of different types of squash and other ways to use them
Learn to balance the rich flavours of these harvest ingredients
You will leave class with a delicious recipe and the skills to re-create it throughout the chilly season ahead.

Pie Perfection
Tired of soggy bottoms and dry, burned crusts on your pies?
Join Chef Maia in Kitchen 49 and learn to create Perfect Pies from scratch. She will lead you through how to craft buttery, flaky crusts and tips for rich, flavourful fillings.
In this class you will:
Learn the secrets to prepare the perfect pie crust - every time
Creating picture-pretty presentations & toppings
Find the golden ratio to creating consistent fruit fillings
You will take home a completed pumpkin pie that is Instagram-worthy! You will also get your extra dough and a bonus recipe to make another pie at home.

Featuring ingredients from local producers, Meg and Maia will be demonstrating the easiest and best ways to carve your Thanksgiving turkey, and show how to make a Crisp Brown Butter Sage to add that chef’s kiss to your holiday meal. During the hands-on portion of the class, participants get to prepare their own Pumpkin Gnocchi to take home and serve up for the family.

Baked Bannock and Jam
It’s the National Day for Truth and Reconciliation on September 30
The kids are out of school and this is a great activity to get them learning about Indigenous culture hands-on. The Red Deer Native Friendship Centre will come by to talk about Bannock and get the kids making their oven-baked bannock bread followed by a simple refrigerator jam to take home for their family to enjoy!

Pickle Power: Carrots & Cukes
Join us for an engaging and hands-on cooking class where you'll master the art of pickling. In this session we will be focusing on transforming fresh cucumbers and crisp carrots into deliciously tangy and crunchy pickles. You will be leaving with your very own jarred pickles and carrots, ready to enjoy at home.
